In an effort to eat more healthily, I have taken to cooking dinners at home. Slowly, my meals are surpassing “edible” and achieving “tasty”. Last Friday was one of my bests: a homemade lasagna with eggplant and zucchini instead of noodles (low carb and all). It was delicious.
